Okonomiyaki: Savory Japanese Pancakes

INGREDIENTS:
* 2 cups Okonomiyaki Powder Mix
*1 to 1 1/4 cups water
* 2 - 3 eggs
*3 cups shredded cabbage (shredded carrots and bean sprouts optional)
* 3 tbsps chopped green onion
* 1 1/2 cups chopped cooked chicken, pork or shrimp (or combination)

TOPPINGS:
* Ao-nori (dried green seaweed flakes)
*Okonomiyaki sauce (or tonkatsu sauce) (comes in regular or spicy)
* Japanese-style Mayonnaise (or regular)
*katsuobushi (Bonito flakes [smoked fish flakes])

PREPARATION:
Mix the powder mix and water until batter-consistency. Stir in the rest of the ingredients. Heat an electric pan to medium-high heat and oil slightly. Pour the batter into the pan and make a round. Cook 5-7 minutes until lightly browned. Flip the okonomiyaki and cook for 5-7 more minutes. Press gently with spatula to make sure no raw batter squeezes out. Remove from pan and place on plate. Spread okonomiyaki sauce and mayonnaise on top. Sprinkle aonori and katsuobushi (bonitoflakes) over the sauce. Makes 4-6 servings.
