Grandpa's Morning Brunch
Scones with Devonshire Cream & Jam
Yields 12
1 egg
Buttermilk (to equal 1 cup when combined with egg)
2 Cups flour
1/4 Cup sugar
2 1/2 Teaspoons baking powder
1/2 Teaspoon salt
6 Tablespoons cold, firm butter
1 Cup of your favorite dried fruits (craisins, apricots, cherries, raisins etc.)
1/2 Cup white baking chips
Preheat oven to 400 degrees
In a one cup measure, slightly beat egg. Add buttermilk to fill 1 cup
Set aside
In a large bowl, sift together flour, sugar, baking powder and salt. Using a pastry blender, cut in butter until mixture is crumbly.
Toss in dried fruit and baking chips.
Add buttermilk mixture and stir just until dough clings together.
Do not over mix.
On an ungreased baking sheet, drop dough by scoops.
Bake for 12 to 15 minutes or until lightly browned.
Serve scones plated with Devon shire cream and jam.
Garnish with fruit.
Devonshire Cream
1 (3 oz) package cream cheese at room temperature
1 Tablespoon powdered sugar
1/2 Teaspoon almond flavoring
1/3 Cup whipping cream (may use less or more to desired consistency up to 1/2 cup)
In a small bowl beat together cream cheese , powdered sugar and almond flavoring until fluffy.
Slowly add whipping cream and beat just until spreading consistency.
Do not over beat.
Grandpa Gene's Scramble
6 to 8 servings
Combine in a large bowl:
2 to 3 slices of precooked bacon
3/4 Cup diced ham
Combination of diced green, yellow & red pepper, tomatoes & jalapeno to your taste
Warm in a large skillet
Break 10 eggs into a large bowl and beat
Spray your frying pan with cooking spray
Heat pan, When pan is ready add eggs
Then stir in warm vegetables and meat
Cook egg mixture until it is ready to flip.
After flipping, cook until eggs are nearly set.
Top with shredded cheddar cheese if you like.
Cranberry Orange Punch
1 Cup cranberry orange relish
3 1/2 Cup water
12 oz can of frozen orange or cranberry juice concentrate
2 liter bottle of 7 Up or ginger ale
Blend juice and relish until smooth in blender
Add water then put in a container and freeze over night
Before serving, bring mixture out to room temperature for about
2 hours or until it thaws to a slush consistency
Add 7 Up or Ginger ale
Serve in a large punch bowl
Makes about 16-8-ounce servings
