Breakfast - Cooking With Kids
Banana Sour Cream Pancakes
1 1/2 cup all-purpose flour (I substitute 1/2 cup of *quinoa flour for health benefits)
3 Tablespoons sugar
2 Teaspoons baking powder
1 1/2 tsp. kosher salt
1/2 cup sour cream
3/4 cup plus 1 T. milk
2 extra-large eggs
1 teaspoon pure vanilla
1 teaspoon grated lemon zest
Unsalted butter
2 ripe bananas, diced plus extra for serving
In medium bowl, sift together the flour, sugar, baking powder, and salt. Whisk together the sour cream, milk, eggs, vanilla, and lemon zest. Add the wet ingredients to the dry ones, mixing only until combined.
Melt 1T butter in large skillet over medium-low heat until it bubbles. Ladle the batter into the pan. Distribute a rounded tablespoon of bananas on each pancake (if desired). Cook for 2-3 minutes until bubbles appear on top and the underside I nicely browned. Flip and cook for another minute, until browned. Wipe out the pan and continue until all batter is gone. Serve w/sliced bananas, butter and maple syrup.
*Whole grain found in the health food section. It is an ancient grain found in the Andes with all 8 essential amino acids.
MN State Fair (Green) Eggs & Ham
2T Butter
1/4 cup chopped green pepper
1/4 cup chopped onion
1/2 cup chopped ham
1/2 cup grated sharp cheddar cheese (divided)
1/2 cup milk
8 eggs
Salt & Pepper
*Green food coloring
Melt butter in non-stick skillet. Add onions and green pepper and salt & pepper and sauté until soft. Whisk eggs, milk pinch of salt & pepper and add to pan. Cook for 1 minute. Add chopped ham and of the cheese and cook, stirring occasionally until eggs are almost set. Add remaining cheese and cook until eggs are set but still glossy. (Don’t overcook!)
*For fun, if you want to add green food coloring do so when you are whisking the eggs. Add about three drops!
Mixed Berry Yogurt Parfaits
Serves 4-6
2 cups vanilla yogurt
1/2 tsp vanilla
Seeds scraped from vanilla bean (optional)
1/2-1 pint blueberries
1/2-1 pint raspberries
1 pint strawberries, hulled and cut in half
I papaya, peeled, seeded and diced
Combine the yogurt w/vanilla. Gently mix the fruit together and spoon into serving dishes. Top with yogurt and granola.
