Recipe Name: Michelle's Lumpia
Ingredients: 1 lb lean ground beef
1 bunch green onions finely chopped
1/4 tsp ground pepper
4 Tbsp soy sauce
1 tsp Accent
1 egg
1 package egg roll wrappers
1 small bottle cooking oil of your choice.
Instructions: Mix first five ingredients together like you do when you make meatloaf in a large mixing bowl. Let stand 15 minutes. Beat the egg in a small bowl set aside. Take enough meat mixture to make a finger size roll and roll the meat mixture to fit the middle of the egg roll wrapper. Place the meat in the wrapper width wise. Dip your fingers into beaten egg and run along the sides of the wrapper. Fold the sides of the wrapper over covering the ends of the meat like you're trying to hold it inside. Roll the meat up until you've almost closed it it. Wipe egg mixture across the end of the wrapper and finish rolling the meat. The meat should be completely inside the wrapper and the wrapper should look like a small egg roll. Deep fry the lumpia in the cooking oil until the wrappers are a deep golden brown. The best temperature is medium to high heat. You don't want the heat so high the oil burns up. Repeat until the whole package of wrappers are rolled and co
oked.
This recipe can fill one package of egg roll wrappers. Prep time is approximately one hour depending on how fast they cook.

Recipe Name: Rumaki
Ingredients: goose breast cut in bite size pieces
bacon
whole water chesnuts
bottle Italian dressing
soy sauce
Instructions: Marinate goose breast in Italian dressing for at least three hours. Use enough to cover the meat.
At the same time, marinate water chestnuts in soy sauce using enough to coat well.
Precook bacon slightly. It should still be limp and not browned. You want to get some of the extra fat out of the bacon so it doesn't flame on the grill.
Cut bacon in right size lengths so it wraps around the goose chunk and water chestnut and has a little overlap. I usually cut the goose meat in a size that works well with the bacon being cut in half. You can play with this until you find the size you prefer.
You hold one piece of goose meat and one water chestnut, wrap the bacon around it and put a toothpick through to hold it together.
Grill over medium heat until the bacon is well done--it should be slightly crispy. Serve and enjoy!
If you really like garlic, Watkins makes an excellent soy sauce with garlic that can be used instead of regular soy sauce.
Want to kick it up a notch? Stir Emeril's rustic rub into the Italian dressing before marinating the goose.
If you don't have goose meat, you can use duck, chicken, chicken livers, or anything else you would like to try.
